- Hervir el agua y sancochar el camote lavado con su cáscara, jamás sancocharlo cortado o sin su cáscara, pierde sabor, textura y dulzura. Este se retira en cuanto este cocido, 10 minutos más o menos, dependiendo del tamaño. Se deja reposar y luego se pela la cáscara para servirse inmediatamente, no hay mañana con este tubérculo, cambia el sabor. Recomiendo que cuando el camote tenga 5 minutos hirviendo arranques el cerdo.
- Salteado en un wok, calentar el aceite y entra los ajos, jengibre, paprika, pimienta saltear 10 segundos y entra el cerdo más lo hongos hidratados; el cerdo que debe tener el tamaño de medio pulgar, de gente con talla normal jajaja, si es un gigante jugador de basket no funciona la escala. Dale fuego máximo al wok, debes ver algo de humo.
- Cuando el cerdo cambia de color, baja a la mitad el fuego, entra azúcar, cebolla y cebollina, salteas 30 segundo y rematamos con la salsa de soja, vino y vinagre de arroz, salteas 10 segundo y entra cerveza, 30 segundos salteado, corriges la sal y listo.
- Observa que no preparamos el cerdo, entro sin sazonarse, sin macerar y es para lograr un sabor a fuego y humo del wok.
